Southwest Slaw

I made this slaw to go atop some grilled fish tacos (to be posted later) and it was a hit with the family. Aside from being good, it really doesn't get much simpler than this. Despite the name, this would be welcome in almost any situation where you'd serve coleslaw.

Souvlaki

Last night for dinner I decided to do a little Greek street food. I made Souvlaki with a light Mediterranean orzo salad. How can you go wrong with grilled pig-on-a-stick on a nice sunny day? You really can't. Traditionally Souvlaki is made of lamb, but in recent times it's often pork, or even chicken. It's simply small pieces of marinated meat that are grilled on a skewer then served either on the skewer, or on pita bread with tzatziki sauce. I served mine in the latter fashion.

Spaghetti & Meatballs Pizza

This is one of those off-the-wall recipes that just leaves you scratching your head and asking yourself, "But... why?" I don't know how original it is, but I had a brainstorm the other day and just went with it. When it was all said and done, I found myself thinking that this would be a great dinner dish for a kid's party or sleepover (if you're a dad who has girls, make a motel reservation first). It's basically just a funky version of spaghetti and meatballs, and kids generally dig funky.
