Perfect Hard-Boiled Eggs

Hard-boiling eggs is certainly not all that interesting, but it is an essential skill that is simple to master. If you are sick of eggs with that nasty greenish-grayish halo around a yolk that is so hard that it's nearly eligible for use in the PGA, look no further. I found this method in the excellent Anthony Bourdain's Les Halles Cookbook , and it's never done me wrong. It's so simple that you'll have it memorized after you try it a couple times.

Pig Candy!

How can you possibly go wrong with peppered bacon coated with dark brown sugar, baked, then glazed with pure maple syrup mixed with a little cayenne? Yeah, it's naughty good. The great folks at Burger's Smokehouse sent me some of their "crazy thick" (1/4") dry-cured bacon to try, so I thought I'd give it a proper treatment. Right out of the gate, let me say that this bacon is outstanding! Order some up, and thank me later.

Pig Pralines

Here's a funky and piglicious twist on pralines. You'll see these appear in a supporting role in my upcoming Pig Candy Praline Ice Cream recipe, so I thought I'd share this recipe first as a bit of a teaser. I'm mean like that. This is a very simple recipe. I just winged it and didn't use a candy thermometer. It's pretty hard to mess this up.
