Memphis-style Country Ribs

Tonight I had a serious hankerin' to cook some country-style ribs. After driving all over town trying to find some bone-in non-injected (with "up to a 12% solution" of who knows what) I finally had my friends at my local Albertson's cut me some "ribs" from a whole Boston butt. Once I procured the carnage, it was time to mix up some rub. I wanted to try something a little different with these, so I decided to go Memphis-style. Here is what I came up with.

Mexican Roadside Chicken

As I've said many times before, poultry is hands-down my favorite thing to grill and barbecue, especially chicken. I'm always looking for new ways to explore fire-roasted yard bird. This time out I go south of the border, Daddio-style. This recipe is perfect for summer outdoor entertaining. It's simple, but the result is a beautiful and somewhat mysterious (in a good way) blend of light citrus and spices that is a welcome departure from your typical grilled chicken.

Monster Onion Bacon Burgers

Last night I had a request from my wife. She asked for burgers with grilled onions and jack cheese, and with a side of sweet potato fries. I was happy to oblige, and I added bacon. That's very rarely a bad move. OK, a burger is a burger, right? Wrong! A burger is only as good as what it's made of. My blend of choice is half sirloin and half chuck. I've found this to be a great mix of flavor and juiciness. If you can't find or identify either of these, ask your butcher.
