Grilled Ratatouille

The word ratatouille in America these days is probably first known as the popular animated movie by the same name. However, this grilled version of the French classic side dish is a great way to make use of both your grill and the summer's vegetable harvest. Ratatouille in its simplest form is a mixture of sauteed vegetables and herbs. You'd be hard-pressed to find a single recipe that chefs would agree upon. So, I'm more than happy to throw my griller hat into the ring with my own version.

A quick search of the internet will reveal many versions. Let's look at this pragmatically. If you're taking the time to fire up the grill to cook up some carnage, why not get a very simple but impressive side dish out of the deal? It's dirt cheap, incredibly simple, but has enough wow factor to impress your family or guests.

Grilled Watermelon & Fennel Salad with Charred Lemon Vinaigrette

This unique grilled summer salad is the result of a category three brainstorm and a little flavor research. I've long wanted to try grilling watermelon, and I finally decided to actually go for it last weekend. Once I made that decision the next question was what I'd do with it.
