Cucumber & Red Onion Salad

I'm sure that most people have tried some form of this summer salad. Cucumbers and red onion are a great combination, and the sweet and sour dressing basically pickles them. I've added pimento and a combination of herbs that helps to give the salad a little added depth of flavor. The salad pairs beautifully with grilled meats and other summer fare. This is best made the day before you plan to serve it, but a few hours ahead will work if you are in a hurry.

Fire-Roasted Pork Tenderloin with Corn Cakes & Apple-Rum Compote

Pork tenderloin is a great, and often under-appreciated cut. It's fairly inexpensive, easy to cook, healthy (with about the fat of boneless/skinless/just-this-side-of-worthless chicken breast), and it's a wonderful blank canvas for all manner of experimentation. It doesn't take much to elevate this cut into something special, as I did here. Pork tenderloin is very lean (thus the healthy part), so it really needs some help in the moisture and flavor department.

Funky Refried Beans

I love beans! I love all kinds of beans cooked just about any way. I love them steamed, sauteed, baked, fried and refried. Here is a quick recipe for the latter. These are refried beans taken to, dare I say it, another level. I generally hate that expression, but I couldn't resist. Sorry. I normally try to say something more about the recipe at this point, but I'll be honest and say that I don't know what else to say. They are beans and they are good. There. That's all I've got.
