Onion Marmalade

Here is a quick, easy and very tasty condiment that would be great as a grilled steak or burger topping. I am going to use it to make what I hope will be a stellar appetizer, but you can use it as a ready-made alternative to sauteed or caramelized onions. Despite the name, this is most definitely savory rather than sweet.

Patio Daddio Queso Dip

Here is a quick and easy recipe for a great queso dip. It combines chorizo and chili beans with chile powder and hot sauce to create a great cheesy dip for tortilla chips. Of course, you should adjust the chili powder and hot sauce to fit your taste. More is almost always better.

Salsa Diablo

We had a salsa contest at work for Cinco de Mayo, and this was my entry. The 'diablo' in the name is Spanish for 'devil', so you might think this is a salsa that is so hot that it will give your mouth second-degree burns. In reality, it's fairly mild and subtly smoky, with just a hint of heat. I chose the name because all of the major ingredients are fire-roasted. Come on, what else would you expect from a BBQ guy?
